For the batter:
- Flour: 1 ½ cups
- Whole eggs: 4
- Olive Oil: ½ cup
- Grated Parmesan Cheese: ¼ cup
- Grated Romano Cheese: ¼ cup
- Fresh or Dried parsley: 2 tbsp
- Fresh or Dried Basil: 2 tbsp
- Lemon Juice: ½ cups
- Salt and Pepper for seasoning
For the Lemon Sage Sauce:
- Onions- Finely chopped: ½ cup
- Garlic- Finely chopped: 2 tbsp
- Fresh Sage- Finely chopped: 2 tbsp
- Fresh Parsley- Finely chopped: 2 tbsp
- Lemon Juice: 4 tbsp
- Lemon Zest: 2 tbsp
- White Wine: 1 cup
- Heavy Cream: 1 cup
- Unsalted butter- melted: 1 cup
- Salt and Pepper for seasoning
Cooking Method:
The Chicken
- Whip the eggs with salt and pepper. Add the cheeses and whip again until smooth and creamy. Add the basil and parsley in the mixture and keep aside.
- Poke chicken breasts with a fork to make it tender and to make the spice go deeper into the meat. Squeeze in the lemon juice in the chicken and rub salt and pepper on both sides of the chicken breasts. Let it sit for 30 minutes.
- Take one chicken breast at a time, cover it in flour, and dip into the mixture. Heat a skillet in medium flame, add the olive oil and fry the chicken pieces until both sides are golden brown. - Add the chopped onion and garlic into the remaining oil from the fried chicken in the same skillet. Fry the onions until they turn to golden brown in color.
- Add the herbs (sage and parsley) and cook for 2 minutes.
- Finally, add the lemon zest and lemon juice, and stir continuously for a few minutes.
- Add the white wine and boil until the liquid is reduced to almost half. Turn the heat lower and add the heavy cream. Keep stirring continuously to avoid lumps. Turn off the heat when the sauce thickens to your desired density.
