Michelin-starred chef Vikas Khanna has recently developed a fascination for Chhatloyi, a special dish from the Bhaderwahi cuisine of Jammu and Kashmir. He loves the way this dish is made by creating beautiful designs with a batter on a griddle. Khanna shared his admiration on Instagram and mentioned that this dish has even inspired a new item on the menu at his New York restaurant, Bungalow. He is also trying to get a ‘dudli’—a traditional tool used to make Chhatloyi—shipped to New York to achieve the authentic taste.
Khanna is also impressed by the rich flavors of Bhaderwahi cuisine, which uses spices like cloves, cinnamon, and cardamom. He appreciates the variety in their food, which includes different beans, meat dishes, and chutneys made from local fruits. The chef believes the kindness and warmth of the local people, along with the beautiful Himalayan scenery, make the food even more special. Through his work, Khanna hopes to introduce more people around the world to this lesser-known Indian cuisine.
